Good and Sweet: Introducing Dessert Salad

There are some culinary combos that should not work but they absolutely do. Think pineapple on pizza, ice cream with olive oil, apple pie and cheddar cheese, pickles and peanut butter, dark chocolate and chili, French fries and mayo (it sounds less gross if you call it aioli).

Along that same theme, allow me to introduce dessert salad. It is endlessly variable, allowing for creativity and risk-taking. The recipe below is simply a framework.

I came up with this admittedly offbeat recipe in February 2025, after a long day at the American Society of Journalists and Authors annual conference. It was 9 p.m., I’d just shared a platter of sweet potato fries with some other writers, and I hadn’t eaten any greens all day. But I just wanted fruit and chocolate. So… why not

Note: Dessert salad is intended to be eaten as dessert, not as the salad course. But I can’t control what you do, so eat it whenever you please.

Ingredients

  • Berries or other fruit

  • Walnuts or other nuts

  • Cheese of choice (optional; chèvre, Parmigiano, or a cinnamon-spiced cheese work well)

  • Seeds (hemp, pumpkin, sunflower, chia—whatever you like)

  • 1–3 (about an ounce) squares dark chocolate (70–85% cacao)

  • Optional drizzles: honey, maple syrup, tahini, lemon or lime juice, yogurt (not Greek)

  • Salad greens of choice

Equipment

  • Sharp knife

  • Cutting board

  • Vegetable peeler

  • Grater (e.g., Microplane)

  • Small bowl, jar, or liquid measuring cup

  • Mini whisk, spoon, or fork

Instructions

  1. Prep
    Wash and dry all produce.

  2. Base layer
    Arrange greens on a plate. Lightly drizzle with tahini, honey, or another option.

  3. Fruit layer
    Slice larger fruits (like strawberries) and arrange first, then add smaller fruits. Drizzle lightly if desired.

  4. Chocolate + toppings
    Roughly chop most of the dark chocolate, reserving about 1/2 to 1 square.
    Add chocolate, nuts, and cheese:

    • Shave hard cheeses with a vegetable peeler

    • Dollop or crumble soft cheeses
      Lightly drizzle again.

    • Break off a piece of chocolate for yourself and eat it. Do not chew it like a savage (or my husband). Let it melt in your mouth. Savor it. Note its complexities.

  5. Finish
    Sprinkle seeds from largest to smallest.
    Grate or shave the remaining chocolate over the top.

  6. Optional
    Add a scoop of yogurt or cottage cheese in the center. Finish with a final drizzle or garnish.
